    Cheese and tomato sandwich

I grew up on these.  Simple, but oh, so good.  I still take them for lunches and often eat them for dinner.

    Cheese and Tomato Sandwich:

2 slices bread (I use whole wheat, but any kind you like will suit)

Mayonnaise (I use low-fat mayo- gotta be Hellman’s)

3 slices sharp or medium cheddar cheese

    3 slices tomato

Toast the slices of bread.  Spread mayonnaise on the inside of each piece.  On one piece, lay down cheese slices followed by tomatoes.  Top with second slice of bread.  Cut in half and enjoy with a tall glass of milk.
